One of our favourite breakfasts is to have eggs and toast or eggs and hashbrowns (like this morning!). Lily always insists that her eggs be scrambled. The rest of us like our eggs fried so I like to do hers differently so she doesn’t have to wait until the rest of the breakfast is made before I make her eggs. I’ve gotten into the habit of baking her eggs in the middle of cut out buttered bread after seeing this done in one of my old kid’s cookbooks. It was so pretty I thought I’d share the photos.

    We make these so often! They are so good… I love dipping the crispy bread into the runny yolk (and Xavier loves that too)

    I had never thought about using a cookie cutter for different shapes!!

    I like the yolk soft too! If only Lily did than I would cook it on the stove but doing it in the oven gives her favourite result- evenly cooked scrambled eggs. :)

That looks good, we used to have something along these lines fairly often when I could still eat all that stuff – we never used the oven but it would have done a better job at getting the results Lily and I both like! The stars are my favourite cookie cutters for sure and art for breakfast sure sounds good.

  4. Our friends used to eat this a lot — they called it egg in the middle (or maybe egg in the hole) but anyway, my friend’s son eventually started asking for “egg in the middle but without the egg,” which we thought was very funny.

    Okay- I had to go back to that old cookbook that I had growing up to see if this is where I first saw them. It’s Betty Crocker’s Cookbook for Boys and Girls circa 1957. They call them Eggs in a Frame. A classic breakfast with many names. :D
