I got my hands on Quinoa 365 recently to try out some of the recipes before I decide if I want to buy this cookbook. If the rest of the recipes are as good, I may very well do just that.
This is a really delicious gluten free breakfast that I actually tried last week. I was happy to make it again this morning for my visiting friends who eat a more restrictive diet including being gluten and dairy free.
Here’s what I did:
Apple Strudel Cereal
- 1/4 cup slivered Almonds (or chopped Walnuts)
- 1 cup Quinoa
- 2 1/2 cup Water (or a mix of water and almond or other milk)
- 1 Apple, chopped
- 1/4 cup Raisins
- 1 tsp Cinnamon
- 1 tsp Vanilla
- 1 tbsp Demerara Sugar
- Toast nuts and set aside.
- Combine quinoa, water, apple, raisin and cinnamon in a medium sized pot. Bring to a boil, cover and reduce heat. Simmer for 17 minutes.
- Stir in vanilla, sugar and nuts.
- Serve with yogurt or a splash of milk.
I haven’t made anythying with quinoa yet, but it keeps popping up and I think I should def. give it a shot.
is it like oatmeal?
I think the consistancy factor is keeping me stalled.
In this breakfast, it’s very much like oatmeal! You should try it. I bet you’d be surprised that there isn’t any obvious strange consistency to it. xx
We’re drooling…I’m sooo trying this…off to the store after lunch, and I’ve added these things to the list:)
I love that it will be warm…like Vanessa, I’m not keen on the texture quinoa (especially cold, cooked) , but it’s growing on me. I just feel like I’m chewing forever:)
We have oatmeal most weekday mornings, but I’m eager to give this a try to switch things up! Nice that it’s items we usually have on hand. Means I can try it tomorrow!
It is definitely something you would want to mix with something – my bad experience… I thought it would be great plain like rice…. haha Ughhh… This makes it look much more appealing and best it is amazing as well.
I hope you all like it as much as we do.
Courtney- I was using the last of the bag you gave me. You really need to give it another try! Some night, let’s do supper.
We are HUGE quinoa fans in our house. This looks fantastic. Isaac loves oatmeal too and I bet he’d down this without batting an eye. :)
This is similiar to something I make with oats or kamut. We use maple syrup or honey in place of the sugar. And then cranberries instead of raisins. Yum!
Sounds yummy but please rinse the quinoa well before cooking.
