It’s time for our last trip to the cabin for the winter. We could go again anytime but probably wont. You never know if the road will be plowed as far as our property and skiing in with the kids (and all our food and gear) would be A LOT of work. Heck even skiing down the driveway with all that stuff can be a job. So this is the last hurrah until buggy spring!
We’re going with two other families so I’m not planning a whole heck of a lot of food to take. I’m suppose to cover one day. Okay, who am I kidding, I’m taking extra just in case. You never know if you’ll be snowed in and we’re not bringing skis this trip. I’m planning on making:
- Apple Walnut Oatmeal with almond milk
- Buddha Bowl
- Roasted Veggies in Phyllo Pastry with Miso Gravy
- Squash and Bean Saute
- Ymir Curry Bowl (plainly I’m a tease because I STILL haven’t shared the recipe for this amazing dish. Next week I swear.)
- Baked Salmon
- Tofu Dogs (or more accurately for me at least, Sautéed Onions in a Toasted Bun. I almost retch thinking about Tofu Dogs. Blech. But the rest of my family seem to like them.)
I’ve made the soup and froze it so we can eat it when we want and I’ve made all my sauces to take. Just as I think we’re ready, it starts to snow. *shakes fist at the sky* Hopefully it won’t be slushy and difficult to drive tomorrow. How can it be winter already?
I leave you with thoughts of fall…. slush-less fall. Ahhhh….

Oh, and we just made a snowman. Let’s hope it’s melted by tomorrow.
