It’s solstice tomorrow; although you wouldn’t guess it from the weather here. It’s been lovely for sure with cool days allowing for comfortable bike riding, running and other more vigourous activity. I love the cool weather most at night as it allows us to sleep contentedly under our duvet. But it’s also been overcast most days so easy to forget that the longest day of the year is already upon us.

I have so much I’d like to blog about. Some of my posts are six months old! I have many recipes and crafty posts I’d love to share and I’ve taken a zillions of pictures as my garden comes together. For now I’ll share some simple snack ideas. These are just some of our favourites to nibble on throughout the day. Some are old ideas and some are new. What is your favourite simple snack to eat?

Toasted Tomato, Basil and Chedder Stacks. It’s that simple. I stack sliced tomato, a little salt and pepper, fresh basil and a slice of chedder cheese on a toaster friendly plate and toast away. All organic and the basil is home grown.

Citrus Ice Cubes. Try lemon, lime, raspberries, strawberries, mint leaves….. there are so many variations to this simple idea.

Peanut Butter and Chocolate Stuffed Baked Bananas. Yum. Make that Double Yum. We’ve made these over the campfire wrapped in tin foil but I kind of like it better baked in the oven at home. Make yourself two; you’ll thank me for the suggestion.

Lemonade. You need no more than four or five lemons to make this delicious drink and homemade is definitely better than bought when if comes to lemonade.

    Yum! I love the tomato cheese basil idea. I’ve tried baking bananas with chocolate, but not with nut butter have to try that- might give it a try in the camp fire too- we seem to be having lots of those!

    YUM!! we’re going camping next week (first time with the wee ones!) and you can be sure that we will be packing bananas, chocolate and PB!
