I love how simple these burritos are. Simple and delicious. I have my friend Carolina to thank for this fabulous recipe. Homemade burritos are so much better with homemade tortillas. Here’s the my recipe. Try them and you’ll never want to buy expensive, tasteless, processed tortillas from the grocery store again!

Black Bean and Yam Burritos

Black Bean and Yam Burritos

  • 2 Yams, cubed
  • 1 Onion, finely chopped
  • 1 1/2 cups cooked Black Beans
  • 1-2 Carrots, shredded (optional. I often add extra veg depending on what’s in my fridge.)
  • 1 cup Water or Stock
  • 2 cloves Garlic, minced
  • 1 1/2 tbsp Chilli Powder
  • 2 tsp ground Mustard
  • 1 tsp Cumin
  • 1/2 tsp Salt
  • Cilantro, chopped or minced
  • Tortillas
  1. Boil yams in large pot until tender. Drain water from tender yams, return to pot and set aside.
  2. While yams are cooking sauté onions until translucent.
  3. Add black beans, carrots (or other veg), water or stock, garlic, chilli powder, mustard, cumin and salt. Simmer, uncovered over med-high heat for 15 min.
  4. Once bean mixture is done, add yams and cilantro and mash all together with potato masher.
  5. Serve in tortillas with shredded lettuce, avocado or guacamole, salsa or anything else you’d enjoy in a bean burrito.

    Another delicious looking recipe to add to my arsenal of meatless yummies *grin*. We actually just made burritos the other night to but using beef from our cow :) Hubby is a complete meat maniac and hates to go without it but when he’s away at work for a week I love to make vegetarian recipes for the kids and myself so this is going on my shopping list. I don’t think I have a yam in the house :) Enjoy your evening!

    It’s so nice that your meat is from your own land! My husband was a long time vegetarian when we were first together but I ate meat. We’re on the same page now and I appreciate that for the ease in cooking. I’m wondering if I made certain meals when he’s away that I wouldn’t normally? I know we watch certain movies when he’s busy working! I so hope you enjoy these burrritos when you get a chance to try them. They are very tasty and sweet with the yam!

    These look great! I’m going to try these when the boys come back from Phoenix! I’ve come to realize in my “older” years that nothing is better then homemade! I hate eating out and rather have a home cooked meal that we prepared, love homemade presents though I’d actually prefer no gifts at all – a friend’s company is the best gift! :) Courtney xo :)
