This is one of my favourite hearty soups to make. I’ve tweaked the recipe my dad shared with me years ago. I’ve never been that good at following recipes anyway. So here it is!

African Bean Soup

African Bean Soup

  • 3 tbsp Tamari
  • 1/2 cup Water
  • 1 Onion, chopped
  • 2-3 Yams (or potato in a pinch), chopped
  • 2-3 Carrots, chopped
  • 2-3 Celery, chopped
  • Red Pepper, chopped
  • 28 oz can Diced Tomatoes
  • 1-2 cups cooked Chickpeas
  • 4-5 cups or more Water or Stock
  • 1 bunch Cilantro
  • Cracked Pepper
  • 2 tsp Curry Powder
  • 1/3 cup or more Peanut Butter
  1. Heat tamari and water in soup pot. Add onion and yam and cook for about 5-7 minutes.
  2. Add carrots, celery and red pepper. Stir, cover and cook for 5-10 more minutes.
  3. Add tomatoes, chickpeas, water and cilantro. Stir and simmer.
  4. Add curry powder and peanut butter and stir to dissolve. Simmer until yam and carrot are tender.
  5. Serve with more cilantro on top and naan or biscuits or…
