We are all about zucchini these days. Zucchini Cranberry Muffins, Peppery Red Wine Capellini and now Chocolate Chocolate Zucchini Muffins are some of our favourite new zucchini recipes. This muffin is quick and simple to make.

Chocolate Chocolate Zucchini Muffins

Chocolate Chocolate Zucchini Muffins

  • 3 Eggs
  • 2 cups Sugar
  • 1 cup Veg Oil (I use non gmo canola oil)
  • 1/3 cup Cocoa Powder
  • 1 1/2 tsp Vanilla Extract
  • 2 cups grated Zucchini
  • 3 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1/4 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cloves
  • 1/4 tsp Cardamom
  • 1 cup Chocolate Chips
  1. Preheat oven to 350’F. Lightly grease or line two 12 cup muffin tins with paper liners.
  2. In a medium bowl combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves and cardamom.
  3. In a large bowl beat the eggs. Beat in the sugar and oil. Add cocoa, vanilla, zucchini, chocolate chips and stir well.
  4. Add the dry to the wet and mix until just moist.
  5. Pour batter into prepared muffin tins filling 2/3 of the way full. Bake for 20 to 25 minutes.
  6. When muffins are baked, tip muffins sideways in the pan so they don’t sweat underneath.

    We are eating a lot of zucchini right now too. I found a recipe the other day that sounded yummy. I haven’t tried it – but want to. I’ll send it to you when I get myself organized. :)

    Looks freakin’ yummy. It also looks very much like our favourite chocolate zucchini cake recipe. I usually put in a bit of orange zest as well, and it is a-ma-zing. What kind of muffin tin is that you’re using? Looks unusual. I refuse to use the nasty non-stick stuff (teflon or whatever it is), but it’s not easy to find something less nasty. I haven’t looked really hard though.

    Justine- It’s stoneware. I really like it. My friend bought it from Pampered Chef and it came with a small chip in it underneath. She called them to ask if the damage would affect the use. They said no but sent her a new one anyway so she gave the damaged one to me.

    made half recipe, used white choc chips and replaced oil with margarine,very good, also reduced sugar by about 1/4 cup for 12 muffins

    Decadent and delicious!! I cut back the sugar by 1/2 c, next time I will substitute applesauce for half of the oil.

    FANTASTIC!!! made them last night and my 13 year old daughter licked the bowl clean….zucchini and all.
    I did cut the the sugar bt 1 1/2c and replaced 1/2 the oil with apple sauce. Delicious….:)
