Thanks so much Debbie for inspiring me to make my own peppermint extract! I just had to make some once I saw your post. It was the perfect time to cut back my over growing mint. I even hung some of my peppermint to dry for tea.

Peppermint Extract

I filled a jar halfway with bruised peppermint leaves and covered with vodka making sure the leaves submerged. I’ve been shaking or swirling the jar every once and a while and I’m looking forward to the final result in a month or two.

I can’t wait to make some peppermint chocolate… cupcakes… and muffins… and…

That’s a great idea! I always have a huge excess of mint.

Thanks! I think we all need a few more ideas for mint, other than tea!

Annie – With all the ways you’ve inspired me, I’m thrilled to return the inspiration. :)
That top picture is gorgeious, by the way. We’ve been drying mint here for tea as well; It’s Isaac’s favourite. <3

Oh, fun!! I was just telling Fionna we need to get some mint planted around here. We miss our mint under the lemon tree!
    Thanks!

I’ve just done some vanilla (as inspired by you!)
And I was just thinking “hey, I’ve got some spare vodka in the cupboard, I should do some mint too”.
That’s when it struck me how much my life has changed in the last few years. Seriously: “spare” vodka!!!????

Yep, gotta do this too – I have a massive amount of applemint in the garden and some old schnapps in the cupboard! I’m aiming to make a mint choc stout (beer) in the winter.

What a great idea. I love how such simple ideas can be shared so easily on the web. Why did this never occur to me? Now I just need some fresh peppermint.
Anyhow, I posted a link to this fabulous post on my blog, Rosie Girl Dreams last Saturday. Here’s a link:

I am attempting to make this right now but am wondering if it’s normal for the vodka to turn brown after a day? I’m so used to store bought clear liquid extract that I’m feeling unsure….

  13. Annie says:

I should update with a picture of my own because it’s also coloured. I imagine it has to do with the fact that the cholorophyll is oxidising. I also wonder if the clear stuff you buy in the store is synthetic, I’ve never bought it to know though. My extract is smelling fantastic and I’m close to using it!
