I wasn’t sure I was going to love this recipe but it turned out great and I’ve made it a few times now. It makes two loafs I love zucchini season! Anyone have any extra?

Zucchini Chocolate Chip Bread

  • 3 cups All Purpose Flour
  • 2 tsp Cinnamon
  • 1 1/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 3-4 Eggs
  • 3/4 cup Canola Oil
  • 1 2/3 cup Demerara Sugar
  • 2 tsp Vanilla
  • 2 cups Zucchini, grated
  • 1 cup Chocolate Chips
  • 1 cup Walnuts
  1. Preheat oven to 325- 350′ and grease two bread pans.
  2. In a small bowl, whisk together the flour, cinnamon, baking powder, baking soda and salt.
  3. In a larger bowl, whisk together the eggs, oil, demerara sugar and vanilla. Stir in zucchini.
  4. Add dry to wet. Don’t over mix! Just before the dry is completely added, fold in chocolate chips and walnuts.
  5. Pour into prepared bread pans.
  6. Bake for 45 min to an hour or until a knife comes out clean.

    BTW, your comment about moving furniture cracked me up! I have a 99yo great aunt that still moves her furniture around monthly! I think I take after her…but to do it at 99?

    I use that exact same recipe but I keep out the chips and add a bit more vanilla and cinnamon. Soo good. We love it! I will try the chips we have an abundance of zuchinis to eat up.

    Mmm, we all loved it! I’ve been freezing zucchini, but I should bake some of this up with it. But I did have to buy it- our garden is a little sad this year. Oh well. next year maybe I’ll be shipping you giant zucchinis in the mail!

    Courgettes- I’ve only ever read that word. I’d like to hear someone say it irl! Maybe we need to come to the UK.
