This is obviously a vegan brownie but I admit I use real butter in the icing. You will not be disappointed if you make this brownie!

The brownie in this picture was the last in the pan. I was able to sneak it away for a quick photo before it was gobbled up with the rest of them!

Rebar’s Famous Vegan Brownies

Rebar‘s Famous Vegan Brownie

  • 1 1/2 cups Unbleached Flour
  • 1 1/2 cups Demerara Sugar
  • 1/2 cup Cocoa
  • 1 1/2 tsp Baking Soda
  • 3/4 tsp Baking Powder
  • 1 tsp Salt
  • 3/4 cup Coffee (or made Cocoa)
  • 3/4 cup) Soy Milk
  • 1/3 cup Vegetable Oil
  • 1/2 cup Walnuts, roasted and chopped
  • 1/2 cup Chocolate Chips (or Carob)
  1. Preheat oven to 325′ and grease a 9 x 9 pan. (I happen to not have this size so I use a 8 x 8 and then a tiny bread pan for a small sample size)
  2. In a large bowl, stir to combine (so there aren’t any lumps) flour, sugar, cocoa, baking soda, baking powder and salt.
  3. In a smaller bowl combine coffee, soy milk and oil.
  4. Add wet to dry and mix well.
  5. Stir in walnuts and pour into prepared pans.
  6. Sprinkle top with chocolate chips and then bake for 25 minutes or until a inserted knife comes out clean.
  7. When brownies are cool, make the icing.

Icing

  • 7 oz (210 g) Dark Chocolate (in a pinch I use chocolate chips)
  • 5 oz (150 g) Butter (Vegan or not)
  1. Use a kitchen scale to weigh out chocolate and butter.
  2. In a double boiler, melt chocolate and butter together. Whisk thoroughly to get smooth and not streaky.
  3. Pour while still warm on brownie and place in fridge to help set.

    I have to just reiterate your comments on this one, Annie. Absolutely awesome brownies. You’ll never be disappointed in these. I found it helpful to put the brownies in the fridge to cool them off so the icing went on better, then back in the fridge for about 30 min. to set the icing… worked perfect.

  4. That does look good. I’ve seen many a vegan recipe for brownies with chocolate chips but as much as I like (mmm… love) chocolate, the chip version doesn’t do it for me. I know I could use callebaut chunks but I found another recipe that is great veganized. I’m getting hungry just thinking about it!

    I’ve made these brownies dozens of times. Once in a back country hut in the Canadian Rockies. They’re always delicious and guaranteed to please everybody! For the icing I melt the chocolate (I use a good quality dark chocolate bar like ritter sport) melt it with butter and then just pour the hot chocolate over the brownie while it’s still warm in the pan. I serve warm with vanilla ice cream – obviously not vegan but very tasty!!

    Does anyone know what you can substitute the coffee with? I’m guessing more soy milk, but just want to be sure.
